This is a staple in many parts of the world. I love them baked whole with lemon butter.
Take the fish, gut, scale, and score ... Place on a sheet of baking parchment or tin foil. Cut a lemon in half and squeeze the juice over the fish, a grind of black pepper and close the wrapping with the remaining half lemons and a knob of butter. bake until done about 1/2 hour for a one to 2 person fish. The smell of the parcel opening is just heaven. serve with boiled potatoes and a glass of sauvignon blanc
