The white asparagus only has a short season. Nicknamed "The White Gold" it is available from early May until the third week of June.
The traditional recipe is "Á la Flamand". White asparagus, egg and cooked ham with melted butter. Celery leave and nutmeg and some fried potatoes on the side.
